Prep the squash by cutting it in half, removing the seeds and peeling the outside skin.

Cut the squash into cubes and place on cookie sheet with onion and garlic. Bake until tender.

Add to dutch oven with roasted red peppers, oven veggies, salt, red pepper flakes.

Add in chicken stock, cover and cook for 10 minutes.

Carefully immersion blend or transfer to blender. Blend until fully pureed and smooth.

Pour in coconut milk and stir to combine.
