Peach Pastries (Handpies)

Ingredients

– mango – peaches – cornstarch – granulated sugar – lemon juice – grated lemon zest – puff pastry dough – egg – water – ground cinnamon

Into a pot, add in the peaches, mango, sugar, cornstarch, lemon juice and zest. Stir and bring to a boil. Reduce heat to low and cook for 10 minutes.

Cut puff pastry into 4 equal slices and preheat oven to 425 degrees.

Load filling on the bottom half of pastry.

Flip top of pastry over and seal with fork edges.

Brush pastries with egg wash and sprinkle with cinnamon and sugar. Bake 15 to 20 minutes.

Allow to cool 5 to 10 minutes and enjoy!
