Rajas Con Crema

“This Rajas Con Crema recipe uses fire roasted poblanos in a cheesy, Mexican Queso style sauce! It goes great with tortilla chips, on tacos, chicken or even burgers!”

– poblano peppers – salted butter – yellow onion – jalapeño – fresh corn – garlic clove –sea salt – cream cheese – Mexican crema table cream – Monterey Jack Cheese

Fire roast the poblanos over flame until charred.

Steam the poblanos in a bag, then remove the skin, seeds and stems. Cut into strips (rajas)

In a skillet, cook corn, onions, jalapeno in butter until softened.

Add garlic and poblanos (rajas).

Add in cream cheese until melted. Stir and pour in Mexican Crema and cheese.
