Chicken and Chorizo Paella

Ingredients

– boneless, skinless chicken thighs  –olive oil – mild ground chorizo – yellow onion – green bell pepper – garlic  – sea salt and pepper – saffron – Arborio rice (or Bomba or Valencia) – Chicken Stock – Frozen peas –  Parsley – Lemon

Cook chicken thighs for 3-4 minutes on each side & set on a plate.

Add chorizo to pan and break into smaller pieces with a wooden spoon.

Add vegetables, salt and pepper and saffron.

Toast garlic and rice for 1 minutes.

Arrow

Add chicken back to dutch oven and cover with stock. Cover and cook for 15 minutes.

Toss in peas and parsley and cook another 5 minutes.

Serve with lemon wedges and enjoy!
