– boneless beef short ribs  –  salt and black pepper – olive oil –  salted butter – carrot – celery stalk –  yellow onion  –  garlic cloves – tomato paste –  dry red wine – beef stock – sprigs of fresh thyme

Season short ribs with salt and sear each side for about 3 minutes each. Remove to plate.

Add butter and mirepoix of carrot, celery and onion to pot. Season with salt and pepper.

Stir in tomato paste and garlic.

Add in wine and beef stock. Nestle back in short ribs and thyme. Bake for 1.5 hours.

Flip short ribs over and cook for another 1 to 1.5 hours. They should shred very easily when tender and complete.
