Step 1
Prepare the zucchini.
Slice them thinly on mandoline and salt to draw out the moisture. Set aside for 15 minutes.

Make the Filling.
In a large bowl, mix together ricotta cheese, egg, ¾ of the mozzarella, minced garlic, basil, black pepper, thyme, and oregano.

Step 3
Preheat oven to 350. Pat dry zucchini with paper towels. Add 1 cup of marinara to the bottom of a casserole dish.

Step 4
Spread a few tablespoons of filling onto each zucchini and roll up. Place the sealed edge face down into the sauce.

Cover with sauce and remaining mozzarella cheese. Bake for 20 minutes. Then broil for 3 to 5 minutes if you like a crispy top.
