The BEST Zucchini Rolls Ups

These Zucchini Roll Ups Bake to Perfection! You won't even miss the pasta!

Step 1

Prepare the zucchini. Slice them thinly on mandoline and salt to draw out the moisture. Set aside for 15 minutes.

Make the Filling. In a large bowl, mix together ricotta cheese, egg, ¾ of the mozzarella, minced garlic, basil, black pepper, thyme, and oregano.

Step 3

Preheat oven to 350. Pat dry zucchini with paper towels. Add 1 cup of marinara to the bottom of a casserole dish.

Step 4

Spread a few tablespoons of filling onto each zucchini and roll up. Place the sealed edge face down into the sauce.

Step 5

Cover with sauce and remaining mozzarella cheese. Bake for 20 minutes. Then broil for 3 to 5 minutes if you like a crispy top.
