Broccoli Orzo

Description

This Broccoli Orzo is a creamy, delicious, one pot meal for an easy dinner with little clean up. It's absolutely full of flavor and great for busy weeknights, ready in just 20 minutes! 


Ingredients

Scale
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 1 and 1/3 cups of dry orzo pasta
  • 2 garlic cloves, minced
  • 2 and 1/4 cups chicken stock
  • 3/4 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper + additional for serving
  • 1/2 cup of fresh broccoli florets, tore into small pieces
  • 1 cup of parmesan cheese from a block (preferably parmigiano reggiano), finely shredded + additional for serving


Instructions

  1. Heat a dutch oven or large pot over medium low heat on the stovetop. Add in butter and olive oil and allow the butter to melt completely. Toss in the minced shallot and cook for 2 minutes, stirring frequently.
  2. Stir in the garlic and cook for 60 seconds. Then, pour in the orzo and toast for 60 seconds. Stir.
  3. Pour in 1/2 cup heavy cream, chicken stock and sprinkle in salt and pepper. Stir well, then cover the pot and cook for 8 minutes.
  4. Uncover pot, stir and add in broccoli. Cover and cook an additional 6 minutes.
  5. Uncover and stir well, scraping up the browned bits on the bottom of the dutch oven.
  6. Pour in remaining 1/4 cup heavy cream and parmesan cheese. Stir to combine.
  7. Serve immediately and Enjoy! (Optional): Top with additional parmesan cheese and black pepper. 

Notes

  • Cook this one pot meal on Medium Low the whole time for the best results
  • I highly recommend using a dutch oven and make sure the lid fits well
  • The parmesan cheese needs to be shredded from a block. Do not use bagged cheese in this recipe as it doesn't melt well
