Ingredients
Scale
- 10 ounces of dry pasta (penne, gemelli, cavatappi, casarecce, medium shells, etc.)
- 1/2 teaspoon salt
- 1/2 cup reserved pasta water
- 2/3 cup heavy cream
- 2 tablespoons salted butter
- 2 ounces baby spinach
- 2 tablespoons sun dried tomatoes, chopped into fine pieces
- 2 garlic cloves, minced
- (1) 5.2 ounce Boursin cheese garlic and fine herb flavor
- 3/4 cup parmesan cheese, shredded fine
Instructions
- Preheat the oven to 350 degrees. Boil a large pot of water for the pasta. Once boiling, add in 1/2 teaspoon of salt and the pasta.
- Reserve 1/2 cup of pasta water in a bowl and set aside. Boil the pasta for 3 to 4 minutes less than the package recommendation for al dente pasta.
- Transfer the strained pasta into a 9x13 casserole dish. Pour in 1/3 cup heavy cream, baby spinach, garlic, basil, and sun-dried tomatoes. Place the boursin cheese in the center of the casserole dish with 2 tablespoon slabs of butter on each side. Cover the casserole dish with aluminum foil and bake for 10 minutes.
- Remove the casserole dish from the oven. Pour over 1/3 cup of remaining heavy cream, and the parmesan cheese.
- Stir to combine ingredients. Add a few tablespoons of pasta water, if desired. Cover with aluminum foil once more and bake an additional 5 minutes.
- Top with additional cheese, red pepper flakes, and/or basil if desired. Serve and enjoy!
Notes
- Use a 9x13 casserole dish to make stirring easy.
- Cook the pasta 3 to 4 minutes less than al dente because they will continue to cook in the oven.
- Save at least 1/2 cup of pasta water to help make the sauce creamier, if needed.
- Shred the parmesan cheese fresh from a block finely for the best creamy melt.
- Don't skip on the aluminum foil. This helps the pasta from drying out.
