Coconut Balls Recipe

Description

This Coconut Balls Recipe is dipped in dark chocolate for the best Holiday treat! A no bake recipe using only 4 ingredients and so easy to whip up. These are the perfect Christmas dessert!


Ingredients

Scale
  • 14 ounce can of sweetened condensed milk
  • 1 cup of powdered sugar
  • 7 ounce bag of UNSWEETENED Shredded Coconut (make sure it is unsweetened)
  • 5 ounces of dark chocolate chips, about 1/2 a bag
  • Optional: Sea salt for topping


Instructions

  1. Whisk together 1/2 cup powdered sugar with the sweetened condensed milk until smooth.
  2. Pour in the shredded coconut and stir with a spoon or frosting spatula to combine. Stir in the remaining 1/2 cup of powdered sugar to make the mixture less sticky.
  3. Roll the coconut mixture into balls about a tablespoon each and place on a parchment lined cookie sheet or plate (it will need to fit in freezer). Freeze for 1 hour.
  4. About 5 minutes before the coconut balls come out of the freezer, melt the dark chocolate chips in the top of a double boiler (my preferred method), with about 1 cup of water in the bottom portion, or use the microwave, according to package instructions.
  5. Dunk the coconut ball halfway into the chocolate, then place with chocolate side up on sheet of parchment paper. Top with a sprinkle of sea salt, if desired.
  6. Once they are all finished, refrigerate for at least 15 minutes before serving.
  7. Serve and enjoy!

Notes

  • Before rolling the balls, add a little butter or vegetable oil to the surface of your hands to avoid too much sticking. You may have to wash them and repeat once halfway through rolling. This mixture is pretty sticky.
  • Don't skip on the refrigeration time before dunking them into the chocolate or they will not be shaped right and potentially fall apart.
