Ingredients

Scale

Chicken Wraps

Chicken & Marinade:

  • 2 chicken breasts, about 1 lb
  • juice from 1/2 a lemon
  • 1/4 cup olive oil + 1 tablespoon for cooking
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Tzatziki Sauce:

  • 1 (5 ounce) container plain greek strained yogurt (0-2%)
  • 1 tablespoon olive oil
  • 1 tablespoon minced cucumber (seeds and skin removed)
  • 1 garlic clove, minced
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon fresh dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Wraps:

  • 4- 10" burrito sized wraps or tortillas
  • 1 head of romaine hearts
  • 1 cup red bell pepper, seeds and stem removed and sliced
  • 1 cup cucumbers, sliced into circles and quartered
  • 1 cup red onion, sliced thinly
  • 1/2 cup kalamata olives, pits removed if necessary
  • 1 cup feta cheese crumbles

Instructions

  1. Prepare Chicken Breast. Slice each chicken breast in half in width to create two thinner chicken breasts, 4 in total.
  2. Marinate Chicken. Place the chicken in a large bowl. Add in juice from 1/2 a lemon, 1/4 cup olive oil, oregano, garlic powder, paprika, 1/2 teaspoon sea salt, 1/8 teaspoon black pepper. Toss to coat the chicken in the marinade and allow to sit on the counter top for 20 minutes.
  3. Make the Tzatziki Sauce. While the chicken is marinating, combine yogurt, 1 tablespoon olive oil, 1 tablespoon minced cucumber, 2 teaspoons fresh lemon juice, fresh dill, garlic, 1/8 teaspoon salt and 1/8 teaspoon pepper. Stir to combine and place in the fridge until assembling the wraps.
  4. Sauté the Chicken. In a large skillet over medium heat on the stovetop, add in 1 tablespoon of olive oil. Using tongs, add the chicken from the marinade into the skillet.
  5. Cook the chicken breast for 4-5 minutes on each side until the internal temperature reaches 165 degrees. Remove to a plate for a few minutes.
  6. Slice the Chicken Breast into strips or dice into cubes.
  7. Assemble the Wraps. Heat the tortillas on the stovetop or in the microwave for a few seconds to make them pliable. Spread a spoonful of tzatziki sauce into the center of the wrap and top with chicken strips. Top with fresh toppings: lettuce, onion, peppers, olives, feta cheese.
  8. Tuck the ends in and roll into a wrap, like a burrito. Slice in half. Serve with extra tzatziki sauce and enjoy!

Notes

  • Try to cut the chicken in half into similar sized breast so they cook evenly in the pan.
  • Pat dry the lettuce and olives to avoid excess water in the wraps.
  • Make sure to heat the wraps for a few minutes on the stovetop or 15-30 seconds in the microwave for easier folding, without ripping.
