Greek Pitas with Yogurt Dill Sauce

Description

These Greek Pitas with Yogurt Dill Sauce are DELICIOUS! Everyone can build their own, which is awesome! This is the perfect dinner idea and such an easy meal to make! 


Ingredients

For the Yogurt Dill/Tzatziki sauce:

  • (2) 5 oz Fage 2% plain greek yogurt
  • 1/4 cup of diced cucumber (Remove skin and seeds, then roughly chop)
  • 1 clove minced garlic
  • 1 teaspoon dried dill
  • 2 tablespoons olive oil
  • Juice from 1/2 a lemon
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

For the Greek Chicken Pitas:

  • 6 pack of Pita bread
  • 2 cups of Spinach or romaine lettuce
  • 1 cucumber sliced thin
  • 1 cup of Feta cheese (Oh, how I love thee)
  • 1 cup of Kalamata olives
  • 6 Lemon wedges
  • 1/2 of a red onion sliced thin
  • 2 chicken breast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon mediterranean seasoning

Instructions

The sauce needs to sit in the fridge for an hour, so prep that first. 

  1. Into a food processor, add greek yogurt, cucumber, dill, garlic, lemon juice, olive oil, and salt and pepper. Pulse until combined. Cover and refrigerate for an hour before serving. 
  2. For the chicken, follow my Sautéed Chicken Recipe for an easy stove top recipe or you can bake the chicken. 
  3. If baking, preheat the oven to 350 degrees.
  4. Pat dry the chicken breast and season with Mediterranean seasoning and salt and pepper and bake on a baking sheet in the oven for 35 minutes.  Make sure the chicken reads 165 degrees on an instant read thermometer or that the juices run clear with no pink inside. Remove from oven and tent with foil for 5 minutes, then let chicken cool for 3-4 minutes. Slice up the chicken into thin strips. 
  5. Prepare all of the topping ingredients and place onto tray or board, so that everyone can build their own pitas.
  6. Warm the pitas in oven for 3-4 minutes right before serving. *It’s important that they are warm and it helps them to not break apart when building.

Don't forget the yogurt dill sauce for serving! This is the best part!

Notes

Feel free to leave out the chicken if you are vegetarian. Prefer steak? Try marinating a flank steak, grilling and slicing in thin strips. That would be delicious too!
