Mango Pico De Gallo

Description

This Mango Pico De Gallo is absolutely amazing and so simple to whip up! It tastes delicious as a snack or appetizer with tortilla chips or use it to top tacos, chicken, or salmon.


Ingredients

Scale
  • 4 ripe mangos, peeled and diced into small cubes (watch video for detailed instructions)
  • 2 large jalapeños or 4 small, seeds and membranes removed, chopped fine
  • 1 cup cilantro, chopped fine
  • juice from 2 limes 
  • 1 cup red onion, diced fine
  • 1/2 teaspoon salt 
  • 1 tablespoon sugar
  • 3/4 teaspoon cumin
  • few dashes of hot sauce (1/2 teaspoon) *Cholula is my personal fave for it's flavor and little heat

Instructions

  1. First, chop up the mango, jalapeño, onion and cilantro (details in ingredients for how to cut. Plus, watch the video for the easiest way of how to cut a mango)
  2. Add mango, cilantro, jalapeño, red onion, sugar, cumin, hot sauce and salt to a bowl. Squeeze lime juice over the top.
  3. Toss it up and refrigerate for 30 minutes before serving.
  4. Enjoy!

Notes

  • When shopping, buy a couple extra mangos. This is in case you cut them open and they aren't quite ripe or have a bitter flavor. Unfortunately it happens. At only $1-2 dollars each, it's worth it to have a few extras to choose from. Best case scenario, they are all perfectly ripe and you can eat all of your money's worth! 
  • Look for Mangos that when you gently squeeze them they allow for a bit of give, but still feel firm and never mushy. If they are hard still, they will need to ripen a few more days. If you don't plan on making the recipe for a few days, you can purchase them on the harder side.
  • Watch the video tutorial for the BEST way to cut a Mango. Use a small knife or paring knife for cutting.
  • Serve with tortilla chips or top tacos, chicken or fish!
