No Bake Peanut Butter Fudge

Description

This No Bake Peanut Butter Fudge recipe only uses 4 ingredients. It's so simple and you get a big batch of creamy, old fashioned peanut butter fudge.


Ingredients

  • 14 ounce can of sweetened condensed milk
  • 10 ounce package of Reeses peanut butter chips (in the baking isle near chocolate chips)
  • 1 teaspoon vanilla extract
  • 1/2 cup of creamy peanut butter, use a brand like Jif or Skippy (no natural peanut butter)
  • Optional: m&m's, sprinkles or chocolate chips for topping

Instructions

  1. Begin by prepping an 8x8 pan with parchment paper covering the bottom of the pan and up the sides, so it is easy to remove the fudge. Use scissors to slice a slit into the parchment paper on each corner, so it fits well.
  2. Fill the bottom of the double boiler with about 1 cup of water and heat on medium low heat. Add the peanut butter chips into the top and allow them to completely melt, stirring every few minutes.
  3. Once the peanut butter chips melt completely, pour in the sweetened condensed milk and stir to combine. Add in vanilla extract and stir.
  4. Plop in the peanut butter and stir to combine.
  5. As soon as it is mixed in well, pour it into the 8x8 pan. Use a spoon to gently spread the mixture around into the corners.
  6. Take a piece of parchment paper big enough to cover the top and push it down over the top of the fudge. Use hands to press down onto it to make the fudge top even and smooth.
  7. Remove the parchment paper and top with m&ms, sprinkles, chocolate chips or leave it plain. Cover with tin foil and refrigerate for 2 hours. Then, slice into small squares and enjoy or pack them up into cute little boxes and hand out as gifts. 

Notes

  • It's a must to use a creamy peanut butter like Jif or Skippy. Natural peanut butters will not give you good results. 
  • Work quickly when pouring the fudge into the 8x8 pan. It will almost immediately start to harden.
