Smashed Potatoes with Cheese

Description

These Smashed Potatoes with Cheese are the perfect dinner side dish or appetizer. Bite size potatoes are oven roasted to perfection, brushed with garlic butter, then layered with cheese and green onion. A must try recipe!


Ingredients

  • 24 ounce package of bite sized potatoes or baby potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt and 1/8 teaspoon black pepper
  • 2 tablespoons salted butter
  • 2 garlic cloves, minced
  • 1 cup cheddar cheese 
  • 1/4 cup green onion or chives, thinly sliced


Instructions

  1. Preheat the oven to 400 degrees. Wash, scrub and dry the bite sized potatoes.
  2. Toss the potatoes in the olive oil, salt and pepper.
  3. Transfer the potatoes to a cookie sheet and bake for 25-35 minutes until they are fork tender. *If they are extremely small, they will be closer to 25 minutes baking time. 
  4. In a skillet over medium low heat, melt the butter. Add in the garlic and cook until fragrant, approximately 60 seconds. Remove from heat and set aside.
  5. Once fork tender, remove the potatoes from the oven. Smash just once with a potato masher or the bottom of a glass. Brush with garlic butter. Return to the oven for 3 minutes.
  6. Top each potato with cheddar cheese and return to the oven for 3-5 minutes until the cheese is melted.
  7. Top with green onion or chives. Serve with a dip, like this easy sour cream sauce

Notes

  • Watch the cook time for the potatoes closely. You want to pull them out of the oven when you can easily slide a fork into them. Mine took 35 minutes, but if they are smaller, they will take less time to cook. Don't overcook or they may fall apart. 
  • Only cook the potatoes with the garlic butter on top for 3 minutes as the garlic can burn and become bitter.
