Easy Watermelon Feta Arugula Salad

Description

This Easy Watermelon Feta Arugula Salad is the perfect Summer recipe. This Salad combines simple seasonal ingredients and only takes 10 minutes to make!


Ingredients

Scale
  • 2 large handfuls arugula
  • 3 cups medium diced watermelon
  • 1/4 cup red onion sliced very thin
  • 1 cup of cucumber (diced) *skin on or off is fine, I kept it
  • 1/2 cup of crumbled feta
  • 1 tablespoon of olive oil
  • 1 tablespoon of honey
  • juice from 1/2 lime
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper


Instructions

Make the dressing:

Mix olive oil, honey, lime juice, and salt and pepper and whisk. Place in the fridge until serving. 

Make the salad 10 minutes prior to serving:

After slicing the watermelon into bite size pieces, allow it to sit in a strainer for a few minutes to drain a little bit of the excess liquid. 

Toss the arugula, watermelon, red onion, and cucumber together.

Toss the salad with the dressing. 

Then, add the crumbled feta cheese on top and serve.

Enjoy this seasonal favorite!

Serve immediately to avoid soggy arugula.
