I'm a total sucker for seasonal ingredients, and watermelon is one of our family faves. It is such an easy, fun, & colorful salad that will not disappoint!
Does anyone else feel like watermelon connects them to their childhood? I remember always having it to munch on during those summer vacay days, when you had absolutely no plans, but to play by the pool. Ahhh, those were the days...so dreamy!

Ingredients:
Watermelon- The Star of the Salad & my all time favorite fruit
Cucumber- Crisp and refreshing, just like this salad
Red Onion- Thinly sliced for a little bite of flavor
Arugula- A green with a touch of bitterness or almost pepper like flavor. If you don't care for arugula, you can substitute baby spinach
Crumbled Feta- The perfect salty cheese to pair with watermelon
Olive Oil, Honey, Lime, Salt and Pepper- Creates a sweet, light and citrusy dressing to top off the salad
How to make this Easy Watermelon Feta Arugula Salad:
Make the dressing:
Mix olive oil, honey, lime juice, salt and pepper and whisk. Place in the fridge until serving.
Make the salad 10 minutes prior to serving:
After slicing the watermelon into bite size pieces, allow it to sit in a strainer for a few minutes to drain a little bit of the excess liquid.
Toss the arugula, watermelon, red onion, and cucumber together.
Next, toss the salad with the dressing.
Then, add the crumbled feta cheese on top and serve.
Enjoy this seasonal favorite!

Ingredients
- 2 large handfuls arugula
- 3 cups medium diced watermelon
- ¼ cup red onion sliced very thin
- 1 cup of cucumber (diced) *skin on or off is fine, I kept it
- ½ cup of crumbled feta
- 1 tablespoon of olive oil
- 1 tablespoon of honey
- juice from ½ lime
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Instructions
Make the dressing:
Mix olive oil, honey, lime juice, and salt and pepper and whisk. Place in the fridge until serving.
Make the salad 10 minutes prior to serving:
