Description
These Caramelized Onions and Mushrooms are filled with sweet flavors with the most amazing melt in your mouth texture. They taste amazing served as a side dish or over baked potatoes, burgers, steak and chicken.
Ingredients
Scale
- 2 tablespoons salted butter
- 2 tablespoons olive oil
- 4-5 ounces of baby bella mushrooms (also known as cremini)
- 1 large yellow onion (or 2 small onions)
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon dried thyme
- 2 garlic cloves
- 1 teaspoon balsamic vinegar
Instructions
- Slice the bottom 1/8 inch of the stem of the mushrooms and discard. Then, slice the mushroom into 1/4 inch slices. Peel the onion and slice in half, then cut into 1/4 inch slices.
- Heat the stovetop to medium low heat. Add the butter with 1 tablespoon of olive oil into a large stainless skillet. Toss in the onions and sauté for 10 minutes, stirring halfway through.
- Sprinkle in salt, pepper and thyme and continue to cook on medium low heat for another 10 minutes, stirring every 2-3 minutes. Remove onions to a plate and set aside.
- Add mushrooms in a single layer to the skillet and drizzle over the remaining 1 tablespoon of olive oil. Cook for 4 minutes, then flip and cook another 3 minutes.
- Add the onions back into the skillet. Toss in the minced garlic and 1 teaspoon of balsamic vinegar. Allow the mixture to cook for another 3-5 minutes, stirring frequently.
- Serve as a topping or side dish and enjoy!
Notes
- Try to slice the onions about 1/4 inch thick and similar in size so they cook evenly.
- I prefer a stainless steel skillet for this recipe because they distribute heat well and caramelize veggies perfectly.
- If the butter starts to burn or the onions brown too much too quickly, reduce the heat.
- Caramelized onions are supposed to cook low and slow. Make sure to be patient and cook the entire time for the best flavor.
