Baby Bella Mushrooms: Also known as Cremini mushrooms, are known for their deep, earthy taste. They maintain a really firm texture and are great for caramelizing. Baby Bellas are just Portobello mushrooms at a younger stage.
Onion: I recommend yellow onions for this recipe for their mild and sweet taste. They also just caramelize really well.

How to Make Caramelized Onions and Mushrooms:
Step 1: Slice the bottom ⅛ inch of the stem of the mushrooms and discard. Then, slice the mushroom into ¼ inch slices. Peel the onion and slice in half, then cut into ¼ inch slices.
Step 2: Heat the stovetop to medium low heat. Add the butter and 1 tablespoon of olive oil into a large stainless skillet. Toss in the onions and sauté for 10 minutes, stirring halfway through.
Step 3: Sprinkle in salt, pepper and thyme and continue to cook on medium low heat for another 10 minutes, stirring every 2-3 minutes. Remove onions to a plate and set aside.
Step 4: Add mushrooms in a single layer to the skillet and drizzle over the remaining 1 tablespoon of olive oil. Cook for 4 minutes, then flip and cook another 3 minutes.
Step 5: Add the onions back into the skillet. Toss in the minced garlic and balsamic vinegar. Allow the mixture to cook for another 3-5 minutes, stirring frequently.
