Description
This Spinach Feta Omelet is so easy to make in just 10 minutes and is full of flavor. It's healthy, delicious and the perfect way to start a productive day.

- 3 large eggs
- 2 tablespoons whole milk
- 1 tablespoon salted butter
- 1 handful of baby spinach, about 1 cup full
- 1/4 teaspoon salt and 1/8 teaspoon black pepper
- 1/4 cup feta cheese + additional for topping if desired
Instructions
- Whisk eggs and milk vigorously together with a fork until combined.
- In a large nonstick skillet over medium low heat on the stovetop, add in the butter and allow it to melt.
- Pour the eggs into the skillet and rotate it slightly to spread into a circle covering the entire pan. Cook for 1 minute.
- Gently layer the spinach onto one half of the omelet. Cover and cook for 2 minutes.
- Uncover. Sprinkle salt, pepper and feta cheese over the spinach. Cover again and cook for two minutes.
- Use a spatula to loosen the edges of the side without the feta and spinach.
- Flip the empty omelet half over the filling side. Cook covered for 1 minute, then flip and cook for another 1 minute. This is just to make sure it is fully cooked. If you like your eggs runnier, feel free to skip this step.
- Serve and enjoy! Top with additional feta cheese, if desired.
Notes
- Use a nonstick skillet coated in butter to help avoid the eggs from sticking to the bottom of the pan.
- Watch the heat. If it starts to brown, reduce the stovetop heat closer to low.
- Covering the pan is important in this recipe because we rely on steaming to cook the eggs and spinach without having to use multiple pans & a lot of flipping.
