Spinach Feta Omelet

Description

This Spinach Feta Omelet is so easy to make in just 10 minutes and is full of flavor. It's healthy, delicious and the perfect way to start a productive day.


Ingredients

Scale
  • 3 large eggs
  • 2 tablespoons whole milk
  • 1 tablespoon salted butter
  • 1 handful of baby spinach, about 1 cup full
  • 1/4 teaspoon salt and 1/8 teaspoon black pepper
  • 1/4 cup feta cheese + additional for topping if desired


Instructions

  1. Whisk eggs and milk vigorously together with a fork until combined.
  2. In a large nonstick skillet over medium low heat on the stovetop, add in the butter and allow it to melt.
  3. Pour the eggs into the skillet and rotate it slightly to spread into a circle covering the entire pan. Cook for 1 minute.
  4. Gently layer the spinach onto one half of the omelet. Cover and cook for 2 minutes.
  5. Uncover. Sprinkle salt, pepper and feta cheese over the spinach. Cover again and cook for two minutes.
  6. Use a spatula to loosen the edges of the side without the feta and spinach.
  7. Flip the empty omelet half over the filling side. Cook covered for 1 minute, then flip and cook for another 1 minute. This is just to make sure it is fully cooked. If you like your eggs runnier, feel free to skip this step.
  8. Serve and enjoy! Top with additional feta cheese, if desired. 

Notes

  • Use a nonstick skillet coated in butter to help avoid the eggs from sticking to the bottom of the pan. 
  • Watch the heat. If it starts to brown, reduce the stovetop heat closer to low. 
  • Covering the pan is important in this recipe because we rely on steaming to cook the eggs and spinach without having to use multiple pans & a lot of flipping.
