Ingredients:
Eggs and Milk: Whisk together to create a fluffy omelet. This recipe uses 3 eggs for a filling breakfast.
Feta Cheese: A crumbly cheese that has a slighty salty taste. It melts down a bit with the spinach and gets a bit creamy.
Baby Spinach: Milder and less bitter than traditional spinach. It's dainty, steams quickly in this recipe and is high in fiber and vitamins. Try these Spinach Triangles too!

Substitutions and Additions:
- For added flavor, sauté the spinach with a few cloves of garlic and shallot in another pan before starting the omelet.
- The whole milk can be substituted with half and half, 2% milk or skim milk. You can even use 1 tablespoon of water instead if you're in a pinch.
- The feta cheese can be substituted with Cheddar, Monterrey jack or Mozzarella.
- Bacon would be a yummy addition to the filling too. Crisp it up in a skillet and chop into small pieces. Add in when adding the feta cheese.

How to Make a Spinach Feta Omelet:
Step 1: Whisk eggs and milk together vigorously with a fork until combined.
Step 2: In a large nonstick skillet over medium low heat on the stovetop, add in the butter and allow it to melt.
Step 3: Pour the eggs into the skillet and rotate it slightly to spread into a circle covering the entire pan. Cook for 1 minute.
Step 4: Gently layer the spinach onto one half of the omelet. Cover and cook for 2 minutes.
Step 5: Uncover. Sprinkle salt, pepper and feta cheese over the spinach. Cover again and cook for two minutes.
Step 6: Use a spatula to loosen the edges of the side without the feta and spinach.
Step 7: Flip the empty omelet half over the filling side. Cook covered for 1 minute, then flip and cook for another 1 minute. This is just to make sure it is fully cooked inside. If you like your eggs runnier, feel free to skip this step.
Step 8: Serve and enjoy! Top with additional feta cheese, if desired.

- ¼ teaspoon salt and ⅛ teaspoon black pepper
- ¼ cup feta cheese + additional for topping if desired
