Chicken Breast on the Blackstone

Description

This Chicken Breast on the Blackstone Griddle is juicy and filled with flavor. It's ready in 30 minutes, including the marinade, and is fantastic with rice, potatoes, pasta or slice it up for wraps or top salads. 


Ingredients

  • 2 chicken breasts (about 1 lb), trimmed and patted dry
  • 3 tablespoons olive oil
  • 1/2 a lemon
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1 teaspoon garlic powder


Instructions

  1. Slice chicken in half through the center to create two thinner chicken breasts, four total.
  2. Add chicken breast into a bowl with 2 tablespoons olive oil, juice from 1/2 a lemon, salt, pepper, oregano, garlic powder, paprika, and parsley. Toss to combine and coat each chicken breast with spices. Allow to sit for 10 minutes on the countertop.
  3. Heat the Blackstone Griddle by turning two side by side burners to medium heat.
  4. Add 1 tablespoon of olive oil onto the griddle and spread it out with a spatula. Allow to heat for a minute. Lay the chicken breast onto the griddle. It should be hot enough to hear a sizzle. Cover with lid for 4 minutes.
  5. Flip the chicken breast and cook for another 4-6 minutes, covered, until the internal temperature reaches 165 degrees. Remove to a plate and tent with foil. Allow to rest for 5 minutes.
  6. Transfer the chicken to a cutting board.
  7. Optional: Slice chicken into strips.
  8. Serve and enjoy!

Notes

  • The marinated chicken can sit for up to an hour on the countertop. I don't recommend marinating longer because the lemon juice will start to break down the chicken too much.
  • Use an instant read internal thermometer to check the temperature of the chicken for the best results!
  • The time it takes to cook the chicken depends on the thickness, which is why the thermometer is so important. If the chicken breasts are sizzling crazy, reduce the heat a bit.
