Ingredients:
Chicken Breast: Sliced into thinner cutlets and grilled to perfection on the Blackstone. I love the Smart Chicken brand and highly recommend it for a high quality product. It's also super clean already in the package, so you don't have to do a lot of trimming.
Olive Oil: The base of the marinade and used to cook the chicken on the griddle. Olive Oil has a high burning point and is fantastic for grilling.
Lemon Juice: Adds acidity to the marinade and breaks down the chicken into tender meat.
Spices: Garlic powder, salt, pepper, paprika, parsley and oregano combine for a greek inspired seasoning.
See the recipe card below for the full list of ingredients and quantities.
Substitutions and Variations:
- If you don't have lemon juice, use 1 tablespoon red wine vinegar.
- For a Mexican Inspired Marinade, substitute the lemon with lime juice and for spices use ½ teaspoon salt, ⅛ teaspoon black pepper, ¾ teaspoon garlic powder, ¾ teaspoon cumin, ½ teaspoon paprika, and ½ teaspoon chili powder.
- This recipe works on any griddle. It doesn't have to be a Blackstone Griddle and this recipe can be made in a skillet on the stovetop too.
How to Make Chicken Breast on the Blackstone:
Step 1: Slice chicken in half through the center to create two thinner chicken breasts, four total.
Step 2: Add the chicken breast into a bowl with 2 tablespoons olive oil, juice from ½ a lemon, salt, pepper, oregano, garlic powder, paprika, and parsley. Toss to combine and coat each chicken breast with spices. Allow to sit for 10 minutes on the countertop.
Step 3: Heat up the Blackstone: Turn two side by side burners to medium heat. Note: If you're doubling the recipe, you may want to heat up a third burner.
Step 4: Pour 1 tablespoon of olive oil onto the griddle and spread it out with a spatula. Allow it to heat up for a minute. Lay the chicken breast onto the griddle. You should hear a sizzle. Cover with lid for 4 minutes.
Step 5: Flip the chicken breast and cook for another 4-6 minutes, covered, until the internal temperature reaches 165 degrees. Remove to a plate and tent with foil. Allow the chicken to rest for 5 minutes.
Step 6: Transfer the chicken to a cutting board.
Step 7: Optional: Slice chicken into strips.
Step 8: Serve and enjoy!
Expert Tips:
- The marinated chicken can sit for up to an hour on the countertop. I don't recommend marinating longer because the lemon juice will break down the chicken too much.
- Use an instant read internal thermometer to check the temperature of the chicken for the best results.
- The time it takes to cook the chicken depends on the thickness, which is why the thermometer is so important. If the chicken breasts are sizzling crazy, reduce the heat a bit.
