Description
Baked Sweet Potato Slices are the easiest Fall side dish or make them for Thanksgiving dinner. They take 10 minutes to prep and are full of sweetness from the roasted sweet potatoes slices, brown sugar and spices. A must try recipe!
Ingredients
Scale
- 3 large sweet potatoes, washed and scrubbed
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 tablespoons salted butter, melted
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
Instructions
- Preheat the oven to 400 degrees. Grease a casserole dish (8x11 or 9x13) with 1 teaspoon of olive oil. Cut the ends of the sweet potatoes and discard, then slice the sweet potatoes into 1/4 inch circular slices.
- Add the potatoes into a large bowl and add in remaining 2 teaspoons of olive oil and salt. Toss to combine and coat each sweet potato slice in oil and salt.
- Arrange in 3 to 4 long rows by overlapping each potato slice. Cover the dish loosely with foil and bake for 25 minutes.
- While the potatoes are baking, in a medium bowl, whisk together the brown sugar, cinnamon, nutmeg, and ground ginger until combined. Melt butter on the stovetop or in the microwave.
- Brush the melted butter all over the tops of the potatoes, then pour remaining over top. Sprinkle on the brown sugar mixture, covering the entire top. Return to the oven and bake, without foil, for another 15 minutes.
- Remove the dish from the oven and allow to cool for 10-15 minutes before serving. Then, serve and enjoy!
Notes
- Try and slice the potatoes in similar size so they cook evenly.
- Use a piece of foil to roast the potatoes in the first portion of baking. This will help them cook through in almost a steaming method.
