Description

This Slow Cooker Rotel Dip with Sausage and Cream Cheese is the best appetizer for the holidays or game day! It's so easy to make with minutes of prep time and only 5 ingredients.


Ingredients

  • 16 ounce Jimmy Dean Regular Pork Sausage
  • 8 ounces cream cheese
  • 8 ounces sharp cheddar cheese, shredded from a block
  • 10 ounce can mild Rotel (tomatoes with chiles) with juices *find near the diced tomatoes in the grocery store
  • 1/4 cup green onion, sliced thinly on a bias


Instructions

  1. In a large skillet over medium heat on the stovetop, cook the sausage until no longer pink, breaking up the sausage as it cooks. Discard the grease and transfer the sausage into the crockpot.
  2. Into the crockpot, over the sausage, add cheddar cheese, cream cheese, and rotel with juices. Turn to high and cover for 30 minutes.
  3. Uncover and stir to combine ingredients. Return the cover and cook for another 20 minutes.
  4. Stir again. Top with green onions. Serve with tortilla chips and enjoy!

Notes

  • Drain the grease from the sausage before adding it to the crockpot to avoid grease in dip.
  • Shred the cheese from a block for the best melt. Don't use bagged pre-shredded cheese, which has anti-caking agents in it that don't melt well.
  • Don't cook for too long on high or it will start to get hardened around the edges.
