This Cheesy Rotel Dip has been in our family for years and it's seriously so simple. We're browning sausage, then adding it right to the crockpot with all the ingredients. Then, melt and stir. The slow cooker does all the work.
It might not be the prettiest dip, but it's one of the most addicting dip recipes. Plus, it's served hot, which is great for the holidays or cold game days.

Ingredients:
Sausage: Regular breakfast pork sausage tastes best with this recipe and pairs well with the cream cheese and rotel. Try this Jimmy Dean Sausage Casserole too!
Cream Cheese and Cheddar Cheese: The base of the recipe and makes a creamy, cheesy dip.
Rotel: Adds a bit of spice and has a blend of tomatoes and green chiles. Feel free to use mild, medium or hot depending on your spice preference.
Green Onion: Sprinkled on for a finishing touch. They're fresh, add a nice color, and a bit of texture.

Substitutions and Variations:
For a spicier version, use hot or medium rotel. You could also substitute the cheddar cheese out for Pepper Jack Cheese.

How to Make Slow Cooker Rotel Dip:
Step 1: In a large skillet over medium heat on the stovetop, cook the sausage until no longer pink, breaking up the sausage as it cooks. Discard the grease and transfer the sausage into the crockpot.
Step 2: Into the crockpot, over the sausage, add cheddar cheese, cream cheese, and rotel with juices. Turn to high and cover for 30 minutes.
Step 3: Uncover and stir to combine ingredients. Return the cover and cook for another 20 minutes.
Step 4: Stir again. Top with green onions. Serve with tortilla chips and enjoy!

- Drain the grease from the sausage before adding it to the crockpot to avoid grease in the dip.
- Shred the cheese from a block for the best melt. Don't use bagged pre-shredded cheese, which has anti-caking agents in it that don't melt well.
- Don't cook for too long on high or it will start to get hardened around the edges.

This dip is supposed to be on the thick side. If it's really thick, you can water it down, by stirring in a few tablespoons of water. Make sure to pour in the juices from the rotel can too. That will help thin the dip out a bit too.
Keep the dip on the warm setting in the crockpot and stir periodically.
I prefer to keep the dip right in the slow cooker and let guests help themselves. Place a big bowl of tortilla chips next to the crockpot and a spoon for serving.
Store the sausage rotel dip in a sealed container in the fridge for 2-3 days. To reheat, warm the dip up in the crockpot or in a small pot on the stovetop over medium low heat.

- 8 ounces sharp cheddar cheese, shredded from a block
- 10 ounce can mild Rotel (tomatoes with chiles) with juices *find near the diced tomatoes in the grocery store
- ¼ cup green onion, sliced thinly on a bias
