Chocolate Ritz Cracker Cookies

Description

These Ritz Cracker Cookies are loaded with creamy peanut butter and coated in milk chocolate with sprinkles. They're so fun and easy to make for the holidays and only require 4 ingredients. Plus, no baking required.


Ingredients

  • 1 sleeve Ritz Crackers (about 30 crackers)
  • 1/2 cup creamy peanut butter, (Jif, Skippy or Peter Pan)
  • 10 ounce milk chocolate melting wafers (Ghirardelli preferred)
  • 1 tablespoon sprinkles


Instructions

  1. Spread about 1 teaspoon of peanut butter onto the inside of one ritz cracker. Cover it with another ritz cracker to make a sandwich. Repeat with a whole sleeve of crackers. It should make between 14 and 15 sandwiches. Place them on a plate.
  2. Put the plate in the freezer for 30-45 minutes. Note: This is important because it holds the peanut butter and crackers together well when dunking in the chocolate.
  3. Prepare a cookie sheet with parchment paper. Fill a double boiler with two cups of water on the bottom portion and pour the melting chocolate into the top portion. Heat the double boiler on low heat on the stovetop and stir the chocolate frequently until smooth and melted. Keep the stovetop burner on low, but be careful, especially if the kids are helping.
  4. Dunk each ritz sandwich into the chocolate and flip with a fork, covering all surface. Carefully pull out of the chocolate and allow the extra chocolate to drip off, then transfer to the parchment lined cookie sheet.
  5. Quickly add the sprinkles while the chocolate is still wet. Allow the chocolate to harden for about 10 minutes.
  6. Serve and enjoy! These are also really fun to wrap up for diy christmas gifts or add to the holiday cookie platter.

Notes

  • Freeze for at least 30 minutes to avoid the sandwiches coming apart when dipped in chocolate.
  • Use parchment paper on the cookie sheet to avoid a mess.
  • Work quickly when dunking in chocolate and keep the double boiler on low heat to keep the chocolate from hardening.
  • Make sure to apply the sprinkles before the chocolate hardens or they won't stick.
