These Ritz Cracker Cookies are loaded with creamy peanut butter and coated in milk chocolate with sprinkles. They're so fun and easy to make for the holidays and only require 4 ingredients. Plus, no baking required.
These are one of my favorite cookies and they're so much easier than baking regular cookies. They remind me of the girl scout tagalong cookies with a peanut butter crunch inside of milk chocolate. They're insanely delicious!

Ingredients:
Crackers: Use Ritz crackers for this recipe for their buttery taste and perfect circular shape. One sleeve makes about 15 sandwiches (30 crackers) as long as none of them are squished. Have an extra sleeve on hand in case there are a lot of broken ones.
Peanut Butter: It's super important to use a smooth and creamy peanut butter like Jif, Skippy or Peter Pan. I know they're not the healthiest, but the other's will make an oily mess.
Milk Chocolate Melting Wafers: Melt perfectly and keep a good smooth texture when we're dipping the peanut butter sandwiches. I highly recommend the Ghirardelli Chocolate wafers for a superior taste. I also like Chocolate Wafers because they harden quickly once they cover the crackers. This makes them ready to eat faster.
Sprinkles: I like the long soft sprinkles best for their texture.

Substitutions and Variations:
The milk chocolate wafers can be substituted with dark chocolate or white chocolate.
Any of your favorite sprinkles will be fantastic in this recipe.
To make a fluffernutter version, add a bit of marshmallow fluff in with the peanut butter.
Alternate method for melting chocolate: You can use the microwave instead of the double boiler and follow the directions on the melting wafers.

How to Make Ritz Cracker Cookies:
Step 1: Spread about 1 teaspoon of peanut butter onto the inside of one ritz cracker. Cover it with another ritz cracker to make a sandwich. Repeat with a whole sleeve of crackers. It should make between 14 and 15 sandwiches. Place them on a plate.
Step 2: Put the plate in the freezer for 30-45 minutes. Note: This is important because it holds the peanut butter and crackers together well when dunking in the chocolate.
Step 3: Prepare a cookie sheet with parchment paper. Fill a double boiler with two cups of water on the bottom portion and pour the melting chocolate into the top portion. Heat the double boiler on low heat on the stovetop and stir the chocolate frequently until smooth and melted. Keep the stovetop burner on low, but be careful, especially if the kids are helping.
Step 4: Dunk each ritz sandwich into the chocolate and flip with a fork, covering all surfaces. Carefully pull out of the chocolate and allow the extra chocolate to drip off, then transfer to the parchment lined cookie sheet.
Step 5: Quickly add the sprinkles while the chocolate is still wet. Allow the chocolate to harden for about 10 minutes.
Step 6: Serve and enjoy! These are also really fun to wrap up for diy christmas gifts or add to the holiday cookie platter.

You can try, but I find they harden quickly when dipping and then take a longer time to harden on the parchment paper. Adding a teaspoon of coconut oil or even vegetable oil can help thin the chocolate chips out when dunking. The melting wafers are easier to work with overall.
Allow the cracker cookies to harden all the way, then store in a sealed container or in ziplock baggies. They can go in the pantry or in the fridge. Eat within 2 -3 days for the freshest taste.
