Cottage Cheese Buffalo Chicken Dip

Description

This Cottage Cheese Buffalo Chicken Dip is spicy, delicious and high in protein! The dip uses Frank's Buffalo Sauce with Rotisserie Chicken for a quick dip that's ready to bake in minutes! Pair it with celery, carrots, tortilla chips or crackers for the best game day snack. Ready in under 30 minutes.


Ingredients

  • 1 cup 2% cottage cheese
  • 8 ounce cream cheese, softened
  • 1 chicken breast from store bought rotisserie chicken, skin removed and diced or shredded
  • 1/2 cup Franks Buffalo Wing Sauce
  • 1 cup Monterey Jack Cheese (about 4 ounces), shredded from the block
  • Optional toppings: 1/4 cup green onion, sliced thinly & 2 tablespoons crumbled blue cheese
  • Serving options: Crackers, Tortilla chips, celery and/or carrots


Instructions

  1. Preheat the oven to 375 degrees. Plop the cottage cheese into a food processor and blend on high, then pulse until smooth.
  2. In a large bowl, add in the softened cream cheese and smash down a bit with a spoon to make it even softer. Add in the cottage cheese and stir together. Note: It's ok if it looks a little chunky, but stir it the best you can.
  3. Add in the Franks Buffalo Wing Sauce, Shredded or Diced Chicken and half of the Monterey Jack Cheese.
  4. Stir well to combine.
  5. Transfer into a 8x10 or 8x8 casserole dish. Top with remaining Monterey Jack cheese. Cover tightly with foil and bake for 15 minutes. Remove foil and broil for 3-5 minutes until bubbly.
  6. Remove from the oven and allow to cool for a few minutes. Top with blue cheese and green onion. Serve with tortilla chips, carrots, celery and/or crackers. Enjoy!

Notes

  • The cottage cheese needs to be blended if you don't want a chunky texture. The clumps won't just melt in the oven.
  • Shred the Monterey Jack cheese from a block for the best melt. Bagged cheese have anti-caking agents in them that don't melt well.
  • Allow the cream cheese to soften at room temperature for 1-2 hours for easier stirring and better blending.
