Ingredients:
Cottage Cheese: Packed with 26 grams of protein per cup and only 5 grams of fat. Yes please! I like it blended for this recipe to avoid chunks in the dip, but you can skip that step if you don't mind them. *Nutrition facts are based off the 2% Daisy Cottage Cheese, which blends really well.
Franks Buffalo Wing Sauce: A must have for this recipe. You won't get a similar taste unless you make your own wing sauce.
Rotisserie Chicken: Saves a ton of time in the kitchen. I only use one breast and remove the skin. Feel free to dice or shred depending on your preference.

- The Monterrey Jack Cheese can be swapped with Pepper Jack, Cheddar, or Mozzarella for this recipe.

How to Make Cottage Cheese Buffalo Chicken Dip:
Step 1: Preheat the oven to 375 degrees. Plop the cottage cheese into a food processor and blend on high, then pulse until smooth.
Step 2: In a large bowl, add in the softened cream cheese and smash down a bit with a spoon to make it even softer. Add in the cottage cheese and stir together. Note: It's ok if it looks a little chunky, but stir it the best you can.
Step 3: Add in the Franks Buffalo Wing Sauce, Shredded or Diced Chicken and half of the Monterey Jack Cheese.
Step 4: Stir well to combine.
Step 5: Transfer into a 8x10 or 8x8 casserole dish. Top with remaining Monterey Jack cheese. Cover tightly with foil and bake for 15 minutes. Remove foil and broil for 3-5 minutes until bubbly.
Step 6: Remove from the oven and allow to cool for a few minutes. Top with blue cheese and green onion. Serve with tortilla chips, carrots, celery and/or crackers. Enjoy!

- The cottage cheese needs to be blended if you don't want a chunky texture. The clumps won't just melt in the oven.
- Shred the Monterey Jack cheese from a block for the best melt. Bagged cheese has anti-caking agents in them that don't melt well.
