Description
Marshmallow Fruit Salad is so easy to make with just 7 ingredients and it makes the perfect potluck side dish for Spring and Summer parties and cookouts. Ready in just 15 minutes with no cooking required!
Ingredients
Scale
- 16 ounce package of strawberries
- 1 cup grapes (red or green)
- 1 cup blueberries
- 4 ounces of cream cheese, softened to room temperature
- 1/2 cup plain greek yogurt
- 7 ounces marshmallow fluff or creme
- 8 ounce cool whip, thawed (not frozen)
Instructions
- Wash the fruit and/or soak in water with lemon juice or vinegar to clean it. Drain well and dry the fruit on paper towels.
- Into a stand mixer or large bowl with hand mixer, beat the softened cream cheese for 30 seconds on medium speed until smooth.
- Add the yogurt to the cream cheese and beat for 30 seconds on medium speed, scraping down the sides as needed. Plop in the marshmallow fluff and beat on low speed for 15 seconds.
- Fold the cool whip into the bowl until the mixture is fully combined. Avoid stirring heavily because we want a whipped texture. Place in the fridge for 5 minutes while we prep the fruit.
- Cut the grapes in half. Remove the stems from the strawberries and cut the berries into small bite sized pieces.
- Remove the cool whip marshmallow mixture from the fridge. Add in blueberries, strawberries and grapes and gently stir until combined.
- Serve and enjoy!
Notes
- Remove as much water as possible from the fruit before adding to the cool whip base.
- Allow the cream cheese to soften to room temperature to avoid chunks in the whipped mixture.
