Description

Crispy Ground Beef Tacos are full of flavor with seasoned beef & melted cheese tucked inside of a crispy fried corn tortilla

Ingredients

Scale
  • 1 lb ground beef (highly recommend 85/15)
  • 2 tablespoons taco seasoning
  • 2 tablespoons water
  • 1/2 cup vegetable or canola oil
  • 14 taco sized corn tortillas
  • 1 and 1/2 cup cheddar cheese, shredded from the block
  • Optional for topping: 1/2 cup diced onion and 1/2 cup finely chopped fresh cilantro

Instructions

  1. Preheat the oven to 400 degrees. In a large skillet over medium heat, cook the ground beef until no longer pink, breaking up the meat as it cooks.
  2. Once the meat is cooked, reduce the heat to low and drain some of the excess grease. I just bunch up a few paper towels and push the meat to one side, then I can absorb some of the grease on the other side of the pan. Sprinkle in the taco seasoning and stir. Leave the heat on low and if it starts to dry out, stir in 2 tablespoons of water.
  3. (1) Heat the oil in a medium sized skillet over medium high heat and allow to heat up for a few minutes. (2) Place just a tiny piece of the edge of the tortilla into the oil and look for an immediate bubbling. If there isn't any bubbling, give it a few more minutes to heat up. Drop the tortilla shell into the oil and cook for 20 seconds. (3) Flip it over and cook for 10 seconds, then fold in half. (4) Remove to a paper towel lined cookie sheet. Repeat with remaining 13 shells.
  4. Remove the paper towels from the cookie sheet and spread the taco shells out so they all lie flat on one side. Stuff each taco shell with a few tablespoons of beef and a sprinkle of cheese. Bake for 4-6 minutes until the cheese is gooey and melted.
  5. Serve these ground beef tacos immediately with all your favorite taco toppings. Enjoy!

Notes

  • If the meat looks a little dry after adding the seasoning, pour in a few tablespoons of water and stir.
  • To test the oil heat, Hold just one tiny piece of the taco shell in the oil and look for bubbles right away. If it's not hot enough, the oil soaks into the tortilla and won't taste right.
