Crispy Ground Beef Tacos are full of flavor with seasoned beef & melted cheese tucked inside of a crispy fried corn tortilla. They're so easy to make in about 30 minutes and even picky eaters love these..it is one of the weeknight dinners that my kids beg me to make over and over again!
These Ground Beef Tacos have been on our weekly meal rotation for years now and we never get sick of them. They are so simple to make and you can add all your favorite toppings.

Ingredients:
Ground Beef: My favorite lean to fat ratio for ground beef tacos is 85/15. This way they are still super juicy and won't dry out like a 93/7, but it also doesn't create a ton of excess fat like 80/20.
Cheddar Cheese: Make sure to shred the cheese from a block for the best melt. Bagged cheese has preservatives that won't allow it to melt correctly.
Vegetable or Canola Oil: A neutral oil that gets the shells really crispy. I highly recommend using it to get the right texture.

Substitutions and Variations:
- If you're more of a flour tortilla person, they fry up really well too. Use a taco size flour tortilla and fry them the same way.

How to Make Crispy Beef Tacos:
Step 1: Preheat the oven to 400 degrees. In a large skillet over medium heat, cook the ground beef until no longer pink, breaking up the meat as it cooks.
Step 2: Once the meat is cooked, reduce the heat to low and drain some of the excess grease. I just bunch up a few paper towels and push the meat to one side, then I can absorb some of the grease on the other side of the pan. Sprinkle in the taco seasoning and stir. Leave the heat on low and if it starts to dry out, stir in 2 tablespoons of water.
Step 3: (1) Heat the oil in a medium sized skillet over medium high heat and allow to heat up for a few minutes. (2) Place just a tiny piece of the edge of the tortilla into the oil and look for an immediate bubbling. If there isn't any bubbling, give it a few more minutes to heat up. Drop the tortilla shell into the oil and cook for 20 seconds. (3) Flip it over and cook for 10 seconds, then fold in half. (4) Remove to a paper towel lined cookie sheet. Repeat with remaining 13 shells.
Step 4: Remove the paper towels from the cookie sheet and spread the taco shells out so they all lie flat on one side. Stuff each taco shell with a few tablespoons of beef and a sprinkle of cheese. Bake for 4-6 minutes until the cheese is gooey and melted.
Step 5: Serve these ground beef tacos immediately with all your favorite taco toppings. Enjoy!
Expert Tips:
- If the meat looks a little dry after adding the seasoning, pour in a few tablespoons of water and stir.
- To test the oil heat, hold just one tiny piece of the taco shell in the oil and look for bubbles right away. If it's not hot enough, the oil soaks into the tortilla and won't taste right.

Storage and Reheating:
Storing: I like to wrap these in foil with 2-4 tacos in each packet and store them in the fridge. My kids usually eat 2 and my husband will easily eat 4 (I think he ate 6 last night). It's best to eat them within 2 days.
To Reheat: Simply add the foil pack right onto a cookie sheet and place in the oven at 350 degrees for 8-10 minutes. If you want them crispier, unwrap and place right on the cookie sheet for the last 3-4 minutes.

- 2 tablespoons taco seasoning
- 2 tablespoons water
- ½ cup vegetable or canola oil
- 14 taco sized corn tortillas
- 1 and ½ cup cheddar cheese, shredded from the block
- Optional for topping: ½ cup diced onion and ½ cup finely chopped fresh cilantro
