Description
This Peach Crumble Cake is one of my favorite Summer desserts. It's so easy to make because we're using store-bought cake mix for a shortcut. Then, it's topped with fresh peaches and a homemade crumble topping for layers of delicious flavors!

Bottom Cake Mix Layer:
- 1 box Betty Crocker White Cake Mix (14.25 ounce box)
- 3 eggs
- 1/2 cup vegetable oil
- 3/4 cup water
- 1-2 teaspoons of vegetable oil, cooking spray or butter to grease the 9x13 dish
Peach Layer:
- 6-7 ripe peaches (skin peeled and discarded), then cut the peaches into about 8-10 slices per peach
Crumble Topping:
- 1/2 cup all purpose flour
- 2 tablespoons granulated sugar
- 1/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 5 tablespoons cold salted butter
*I highly recommend vanilla ice cream for serving too!
Instructions
- Preheat the oven to 350 degrees. Make the cake mix according to the package instructions. *I added cake mix, 3 eggs, 1/2 cup vegetable oil, and 3/4 cup water into a bowl and whisked until smooth.
- Grease a 9x13 inch dish or cake pan with butter, vegetable oil or cooking spray. Pour the cake batter out into the dish and shake a bit to spread out evenly. Set aside.
- Sprinkle the peach slices evenly covering the top of the cake batter.
- To make the crumb topping: In a medium sized bowl, whisk together flour, brown sugar, white sugar and cinnamon until combined.
- Cut the cold butter into about 20 smaller sized cubes.
- Add the butter into the crumb topping mix and use a pinching motion with your hands. The crumble mixture will resemble wet clumpy sand. *It should take a few minutes of pinching motion to achieve the correct texture.
- Sprinkle the crumble topping evenly over the peaches. Bake according to the cake mix instructions in a 9x13 pan, about 27-31 minutes.
- Allow to cool for 15 minutes, then serve warm with ice cream on top. It tastes good at room temperature too. My family devoured this cake! Enjoy.
Notes
- Make sure the butter for the crumble topping stays cold until right before making it.
- Really pinch the butter into the crumb mix until it looks like wet sand. It should take a few minutes.
- Don't forget the vanilla ice cream topping..it's decadent.
