Why You'll Love This Summer Dessert:
- Quick and Easy. Minimal prep work with the store-bought cake mix shortcut.
- Flavor Packed. A cake with fresh fruit and crumble topping?! Sign me up.
- Summer Favorite. I love this cake for the Summer holidays like July 4th and Labor Day, but it's great for any Summer occasion.
- Seasonal Ingredients. Fresh, seasonal peaches are my favorite part of this recipe and so great for Summer.
Ingredients:
Cake Mix: In the Summer, I still need sweets, but I want minimal effort. I love cake mix to throw together simple recipes like this one. This Betty Crocker Super Moist White Cake Mix was perfect for this recipe.
Peaches: I prefer fresh peaches for this recipe and I like them without the skin for that smooth texture.
Butter: Salted butter is best for the crumble topping and make sure it stays cold in the fridge until right before you start the crumble topping.

Substitutions and Variations:
- I recommend fresh peeled peaches, but you can also leave them unpeeled and just sliced. Canned peaches could be used as well, but won't have the fresh texture.
- The White Cake mix can be swapped out with yellow cake mix instead.

How to Make Peach Crumble Cake:
Step 1: Preheat the oven to 350 degrees. Make the cake mix according to the package instructions. *I added cake mix, 3 eggs, ½ cup vegetable oil, and ¾ cup water into a bowl and whisked until smooth.
Step 2: Grease a 9x13 inch dish or cake pan with butter, vegetable oil or cooking spray. Pour the cake batter out into the dish and shake a bit to spread out evenly. Set aside.
Step 3: Sprinkle the peach slices evenly covering the top of the cake batter.
Step 4: To make the crumb topping: In a medium sized bowl, whisk together flour, brown sugar, white sugar and cinnamon until combined.
Step 5: Cut the cold butter into about 20 smaller sized cubes.
Step 6: Add the butter into the crumb topping mix and use a pinching motion with your hands. The crumble mixture will resemble wet clumpy sand. *It should take a few minutes of pinching motion to achieve the correct texture.
Step 7: Sprinkle the crumble topping evenly over the peaches. Bake according to the cake mix instructions in a 9x13 pan, about 27-31 minutes.
Step 8: Allow to cool for 15 minutes, then serve warm with ice cream on top. It tastes good at room temperature too. My family devoured this cake! Enjoy.
Expert Tips:
- Make sure the butter for the crumble topping stays cold until right before making it.
- Really pinch the butter into the crumb mix until it looks like wet sand. It should take a few minutes.
- Don't forget the vanilla ice cream topping..it's decadent.

Hi Lisa, I am obsessed with the crumble topping and had to give some of this cake away to avoid eating it all myself.
