Beef Tortellini

Description

This Beef Tortellini is so creamy and delicious and only takes 25 minutes to make! It's a one pot, stovetop dinner with minimal clean up. My whole family loves this one and it's super easy to make for a quick weeknight dinner. 


Ingredients

  • 1 lb ground beef, 85/15 lean to fat ratio
  • 1/2 cup yellow onion, diced fine
  • 1 red bell pepper, diced fine
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 18-20 ounce cheese filled tortellini, *fridge section NOT frozen*
  • 1 cup chicken stock
  • 1 cup heavy cream
  • a large handful of baby spinach, 1-2 ounces
  • 1 cup parmesan cheese, shredded fine from the block + additional for served (optional)
  • 1 tablespoon fresh basil, chiffonade cut *stack the leaves, then roll up into a cylinder and cut perpendicular into thin strips


Instructions

  1. In a large dutch oven or pot with lid, cook the ground beef over medium heat until no longer pink.
  2. Toss in the bell pepper and onion and cook for 3-4 minutes. Carefully push the ground beef and onions and peppers to one side and gently lift the pan so that the grease drains to the other side. Roll up a few paper towels and soak up the grease and discard. Note: It's ok if there is a little bit left. Add in the garlic, salt, and spices and stir, cooking for another few minutes.
  3. Reduce the stovetop heat to medium low and add in the tortellini, chicken stock and heavy cream. Stir to combine, then cover and cook for 5 minutes. Stir, cover and cook for another 3 minutes.
  4. Add the spinach to the top of the dish and cover and wilt for 2 minutes.
  5. Remove cover and stir in the spinach. Sprinkle in cheese and stir. It should melt right away.
  6. Top the dish with fresh basil and additional parmesan if desired. Serve immediately and enjoy.

Notes

  • Tortellini cooks really quickly and is great for this recipe. If you are substituting it with a different pasta, it will take longer to cook.
  • It's important to make sure the peppers are fully cooked. Dice them really fine and make sure they are tender before adding the cheese into the dish.
  • Shred the cheese from a block or it won't melt properly.
