Description
This Beef Tortellini is so creamy and delicious and only takes 25 minutes to make! It's a one pot, stovetop dinner with minimal clean up. My whole family loves this one and it's super easy to make for a quick weeknight dinner.

- 1 lb ground beef, 85/15 lean to fat ratio
- 1/2 cup yellow onion, diced fine
- 1 red bell pepper, diced fine
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 18-20 ounce cheese filled tortellini, *fridge section NOT frozen*
- 1 cup chicken stock
- 1 cup heavy cream
- a large handful of baby spinach, 1-2 ounces
- 1 cup parmesan cheese, shredded fine from the block + additional for served (optional)
- 1 tablespoon fresh basil, chiffonade cut *stack the leaves, then roll up into a cylinder and cut perpendicular into thin strips
Instructions
- In a large dutch oven or pot with lid, cook the ground beef over medium heat until no longer pink.
- Toss in the bell pepper and onion and cook for 3-4 minutes. Carefully push the ground beef and onions and peppers to one side and gently lift the pan so that the grease drains to the other side. Roll up a few paper towels and soak up the grease and discard. Note: It's ok if there is a little bit left. Add in the garlic, salt, and spices and stir, cooking for another few minutes.
- Reduce the stovetop heat to medium low and add in the tortellini, chicken stock and heavy cream. Stir to combine, then cover and cook for 5 minutes. Stir, cover and cook for another 3 minutes.
- Add the spinach to the top of the dish and cover and wilt for 2 minutes.
- Remove cover and stir in the spinach. Sprinkle in cheese and stir. It should melt right away.
- Top the dish with fresh basil and additional parmesan if desired. Serve immediately and enjoy.
Notes
- Tortellini cooks really quickly and is great for this recipe. If you are substituting it with a different pasta, it will take longer to cook.
- It's important to make sure the peppers are fully cooked. Dice them really fine and make sure they are tender before adding the cheese into the dish.
- Shred the cheese from a block or it won't melt properly.
