Ingredients:

Tortellini: Use the fresh package in the fridge section at the grocery store. Frozen tortellini is going to get really mushy in this recipe because of the high water content.
Ground Beef: The 85/15 lean to fat ratio works best in this recipe because it stays juicy, but also doesn't leave a whole bunch of fat in the pot, like an 80/20 will.
Chicken Stock: Use stock over broth for richer flavor. Stock uses the bones when cooking down and it's much more flavorful. Chicken broth will give you a watery sauce.
Parmesan Cheese: Parmigiano Reggiano is highly recommended for it's superior taste, and it's important to shred it fine from the block for the best melt. If you don't want to pay the parmigiano reggiano price tag ๐ฐbuy a cheaper block of parmesan and it will still taste really good. Do NOT use a bagged pre-shredded cheese because it has anti-caking agents and it won't melt properly.

Substitutions and Variations:
- The Ground Beef can be substituted with ground sausage or 4-5 Italian sausages with the casings removed.
- The Bell Pepper can be substituted with roasted red peppers from the jar for a delicious, smoky taste. Give them a nice chop and add them in with the spinach.

How to Make Beef Tortellini:

Step 1: In a large dutch oven or pot with lid, cook the ground beef over medium heat until no longer pink.

Step 2: Toss in the bell pepper and onion and cook for 3-4 minutes. Carefully push the ground beef and onions and peppers to one side and gently lift the pan so that the grease drains to the other side. Roll up a few paper towels and soak up the grease and discard. Note: It's ok if there is a little bit left. Add in the garlic, salt, and spices and stir, cooking for another few minutes.

Step 3: Reduce the stovetop heat to medium low and add in the tortellini, chicken stock, and heavy cream. Stir to combine, then cover and cook for 5 minutes. Stir, cover and cook for another 3 minutes.

Step 4: Add the spinach to the top of the dish and cover and wilt for 2 minutes.

Step 5: Remove cover and stir in the spinach. Sprinkle in cheese and stir. It should melt right away.

Step 6: Top the dish with fresh basil and additional parmesan if desired. Serve immediately and enjoy.
Expert Tips:
- Tortellini cooks really quickly and is great for this recipe. If you are substituting it with a different pasta, it will take longer to cook.
- It's important to make sure the peppers are fully cooked. Dice them really fine and make sure they are tender before adding the cheese into the dish.
- Shred the cheese from a block or it won't melt properly.

Storage & Reheating:
Store in a sealed container in the fridge for up to 2 days. To reheat, add back into the dutch oven and add in ยผ cup chicken stock and ยผ cup heavy cream. Heat covered on medium low, uncovered and stirring every few minutes until hot. It only takes about 10 minutes.

- 1 red bell pepper, diced fine
- 2 garlic cloves, minced
- ยฝ teaspoon salt

- 18-20 ounce cheese filled tortellini, *fridge section NOT frozen*
- 1 cup chicken stock
- 1 cup heavy cream
- a large handful of baby spinach, 1-2 ounces
- 1 cup parmesan cheese, shredded fine from the block + additional for served (optional)
- 1 tablespoon fresh basil, chiffonade cut *stack the leaves, then roll up into a cylinder and cut perpendicular into thin strips
