Description
Pancake Bites are high protein and so easy to make! We're using Kodiak Protein Cake Mix for a low effort batter that whips up in minutes with minimal ingredients. Then, fill up a mini muffin tin and bake. Ready to eat in 25 minutes!

- 1 cup Kodiak Power Cakes Flapjack and Waffle Mix
- 2 tablespoons vegetable oil (1 tbs for the batter and 1 tbs to grease the muffin tin)
- 1 egg
- 3/4 cup whole milk
- 2 tablespoons mini chocolate chips, semi sweet, milk or dark
- 1 tablespoon powdered sugar
- Optional: Syrup for dipping
Instructions
- Preheat the oven to 350 degrees. Grease a 24 count mini muffin pan heavily with cooking spray or using a paper towel coated in vegetable oil (about 1 tablespoon of oil)
- In a mixing bowl, whisk together pancake mix, 1 tablespoon vegetable oil, milk and egg just until combined.
- Toss in chocolate chips and stir to incorporate.
- Add 1 tablespoon of batter to each mini muffin hole. Bake for 8-10 minutes until no longer raw in center and golden brown on the tops.
- Allow the mini pancakes to cool in the muffin tin for 10 minutes.
- Run a butterknife around the outsides of the pancake and they should pop right out.
- Sprinkle with powdered sugar and/or serve with syrup for dunking. Enjoy!
Notes
- Don't over mix the batter.
- Heavily grease each muffin tin with vegetable oil or cooking spray or the pancakes will stick and be difficult to remove.
