It's back to school season in our house and these cute Mini Pancake Muffins are a new favorite for breakfast. The kids love them and so do I.

Ingredients:

Kodiak Power Cakes Flapjack and Waffle Mix: I used the Buttermilk version for this recipe and added my own mini chocolate chips, which I highly recommend.
Milk: Water can be used with pancake mixes, but milk always makes the results taste better.

Substitutions and Variations:
- You can use other forms of pancake mix for this recipe, but I haven't tested different brands.
- The whole milk can be substituted with 2%.
- The chocolate chips can be removed from the recipe or replaced with blueberries.

How to Make Pancake Bites:

Step 1: Preheat the oven to 350 degrees. Grease a 24 count mini muffin pan heavily with cooking spray or using a paper towel coated in vegetable oil (about a tablespoon).

Step 2: In a mixing bowl, whisk together pancake mix, 1 tablespoon vegetable oil, milk and egg just until combined.

Step 3: Toss in chocolate chips and stir to incorporate.

Step 4: Add 1 tablespoon of batter to each mini muffin hole. Bake for 8-10 minutes until no longer raw in center and golden brown on the tops.

Step 5: Allow the mini pancakes to cool in the muffin tin for 10 minutes.

Step 6: Run a butterknife around the outsides of the pancake and they should pop right out.

Step 7: Sprinkle with powdered sugar and/or serve with syrup for dunking. Enjoy!
Expert Tips:
- Don't over mix the batter.
- Heavily grease each muffin tin with vegetable oil or cooking spray or the pancakes will stick and be difficult to remove.

Storage:
Allow to cool to room temperature then store in a sealed container or ziplock and store in the fridge for up to 3 days.
To Reheat: Add into the microwave in 15 second increments until hot or wrap in foil and add into a 350 degree oven for 5-10 minutes until hot.

- ยพ cup whole milk
- 2 tablespoons mini chocolate chips, semi sweet, milk or dark
- 1 tablespoon powdered sugar
- Optional: Syrup for dipping
