Shrimp and Broccoli Stir Fry (One Skillet)

Description

This Shrimp and Broccoli Stir Fry recipe comes together all in one skillet in just 30 minutes! It's the perfect weeknight dinner packed with nutrients and protein and it's super easy to make. Serve it over rice for a complete meal! 


Ingredients

Stir Fry:

  • 1 cup white rice (preferably jasmine or basmati)
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 carrot, peeled and diced into smaller pieces
  • 1/2 of a yellow onion, diced
  • 2 cups broccoli florets, cut into smaller florets
  • 1 and 1/2 lb Argentine Pink Shrimp 16/20 ct per lb, (peeled and deveined from butcher)
  • 1 tablespoon sesame seeds
  • 1 tablespoon green onion, cut on a bias

Teriyaki Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1/2 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1/2 teaspoon fresh ginger, grated fine
  • 1/8 teaspoon crushed red pepper flakes


Instructions

  1. Rinse the rice well, then add into the rice cooker with 2 cups of water and press plain or white rice. *You can also cook in a pot according to package instructions
  2. Into a large skillet over medium heat on the stovetop, add in 1 tablespoon of olive oil and allow it to heat up. Toss in broccoli, onion, and carrot and stir to combine. Cover and cook for 5-6 minutes to soften the vegetables, stirring half way through. Once softened, transfer to a plate.
  3. Into the empty skillet still on medium heat, pour in the remaining 1 tablespoon of olive oil, then add the shrimp in an even layer, laying on one side and cook for 2-3 minutes, then flip and sauté for another 2-3 minutes until the internal temperature reaches 145 degrees. Transfer to a plate.
  4. Reduce the skillet heat to medium low to make the teriyaki sauce. Pour in soy sauce, hoisin, sesame oil, rice vinegar, garlic, ginger, red pepper flakes and honey. Stir to combine and allow to come to a boil. Note: When using a wooden spoon, the texture should become thick enough to where when stirring you can see the bottom of the pan for a moment.
  5. Reduce the heat to low and add the shrimp and veggies back into the skillet and toss to coat everything in teriyaki sauce.
  6. Top the shrimp and broccoli stir fry with green onions and sesame seeds. Serve with rice and enjoy! 

Notes

  • Chop the carrots into fine pieces and the broccoli florets small to make sure they cook fully and aren't raw inside at serving. 
  • Buy the shrimp peeled and deveined from the butcher to avoid 15 extra minutes of prep work.
  • Avoid frozen shrimp and frozen vegetables. Frozen options will water down the dish and sauce.
  • Let the sauce thicken and bubble for a minute or so before adding the shrimp and veggies back into the skillet for a thicker textured sauce.
