Ingredients:

Shrimp: Argentine Pink Shrimp are my favorite choice for this recipe. They are a deepwater shrimp with a crisp texture.
Broccoli: Use fresh, not frozen, for the best taste. Frozen brings in too much water and the dish will turn out soggy.
Rice: Jasmine or Basmati rice are delicious in this recipe. Use white over brown rice because it's quicker and ready in under 30 minutes in the rice cooker.

Substitutions and Variations:
- The Pink Argentine Shrimp can be substituted with a Gulf Shrimp, usually grey in color. Try and find the medium-large sized that are 16/20 ct per lb.
- For a quicker option, you can use a store bought teriyaki sauce. I love the Kinder's Teriyaki Sauce and Glaze with ginger and garlic.

How to Make a Shrimp Broccoli Stir Fry:

Step 1: Rinse the rice well, then add into the rice cooker with 2 cups of water and press plain or white rice. *You can also cook in a pot according to package instructions

Step 2: Into a large skillet over medium heat on the stovetop, add in 1 tablespoon of olive oil and allow it to heat up. Toss in broccoli, onion, and carrot and stir to combine. Cover and cook for 5-6 minutes to soften the vegetables, stirring half way through. Once softened, transfer to a plate.

Step 3: Into the empty skillet still on medium heat, add the remaining 1 tablespoon of olive oil, then the shrimp in an even layer, laying on one side and cook for 2-3 minutes, then flip and sautรฉ for another 2-3 minutes until the internal temperature reaches 145 degrees. Transfer to a plate.

Step 4: Reduce the skillet heat to medium low to make the teriyaki sauce. Pour in soy sauce, hoisin, sesame oil, rice vinegar, garlic, ginger, red pepper flakes and honey. Stir to combine and allow to come to a boil. Note: When using a wooden spoon, the texture should become thick enough to where when stirring you can see the bottom of the pan for a moment.

Step 5: Reduce the heat to low and add the shrimp and veggies back into the skillet and toss to coat everything in teriyaki sauce.

Step 6: Top the shrimp and broccoli stir fry with green onions and sesame seeds. Serve with rice and enjoy!
Expert Tips:
- Chop the carrots into fine pieces and the broccoli florets on the smaller side to make sure they cook fully and aren't raw inside at serving.
- Buy the shrimp peeled and deveined from the butcher to avoid 15 extra minutes of prep work.
- Avoid frozen shrimp and frozen vegetables. Frozen options will water down the dish and sauce.
- Let the sauce thicken and bubble for a minute or so before adding the shrimp and veggies back into the skillet for a thicker textured sauce.

Stir Fry:

- 1 carrot, peeled and diced into smaller pieces
- ยฝ of a yellow onion, diced
- 2 cups broccoli florets, cut into smaller florets
- 1 and ยฝ lb Argentine Pink Shrimp 16/20 ct per lb, (peeled and deveined from butcher)
- 1 tablespoon sesame seeds
- 1 tablespoon green onion, cut on a bias
Teriyaki Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- ยฝ teaspoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 garlic clove, minced
- ยฝ teaspoon fresh ginger, grated fine
- โ teaspoon crushed red pepper flakes
