Description
This Ground Beef Hash Brown Casserole or Hotdish is such a delicious dinner ready in just 30 minutes! It's easy to make with minimal prep work and so satisfying with cheesy hash browns and seasoned ground beef, with a bit of spice! It will be a new family favorite.

- 16 ounce ground beef (85/15)
- 1/2 cup diced yellow onion
- 2 teaspoon taco seasoning
- 1/2 teaspoon salt
- 20 ounce shredded Simply Hash Browns (fresh near eggs, not frozen)
- 8 ounce block cheddar cheese, shredded from the block
- 8 ounce sour cream
- 10 ounce cheddar cheese Campbells soup
- 10 ounce Rotel (diced tomatoes and green chilies) I prefer mild
- 1 tablespoon green onion, sliced on a bias for topping
Instructions
- Preheat the oven to 425 degrees. In a large skillet over medium heat, add in the ground beef and cook breaking up the meat in the skillet as it browns.
- After a few minutes of cooking, stir in the onions, salt and taco seasoning and cook until the beef is no longer pink (this should take less than 10 minutes and if you're worried about it, don't be because it will cook more in the oven). Turn off the heat and push the beef and onions to one side of the pan and use a few paper towels to remove some of the excess grease.
- In a large bowl, combine hash browns, cheddar cheese, cheddar cheese soup, drained Rotel, and sour cream. Stir to combine.
- Add in the beef and onions mixture and stir again until combined.
- Transfer to a casserole dish (9x13 or 8x10) and cover with foil. Bake for 12 minutes, then remove foil and bake for another 8 minutes.
- Remove from the oven and allow to cool for 10 minutes before serving. Top with green onions, cut into squares, serve and enjoy!
Notes
- Shred the cheese yourself for a better melt.
- Drain a bit of the grease from the ground beef if it's a lot, but a few teaspoons will be good to cook the hash browns in the oven.
