This Ground Beef Hash Brown Casserole or Hotdish is such a delicious dinner ready in just 30 minutes! It's easy to make with minimal prep work and so satisfying with cheesy hash browns and seasoned ground beef, with a bit of spice! It will be a new family favorite.
This recipe is so tasty and is a lot like my Cheesy Hash Brown Casserole, but we're adding in hamburger for protein to make it a full meal.
I love serving this one with my Stuffed Garlic Bread for a seriously delicious match up. My husband was obsessed with this casserole and couldn't stop eating it.

Ingredients:

Ground Beef: I prefer to use an 85/15 lean to fat ratio because it stays juicy and doesn't dry out, but also doesn't leave a ton of grease, like an 80/20 will.
Hash browns: I highly recommend the Simply Shredded Potato Hash browns for this recipe in the original version. They cook faster in this recipe versus frozen and they don't release all the excess water.
Cheddar Cheese: Shred from the block for the best melt. The bagged cheeses have preservatives that don't melt well.
Rotel: A combination of diced tomatoes and green chilies make this dish flavorful with a touch of heat. I like using the mild version and I accidentally grabbed the regular one, which my husband loved, but I feel like is a bit too spicy. Make sure to remove the excess juices in the can, so the casserole doesn't get watery.

Substitutions and Variations:
- The Rotel can be mild, original or hot depending on your preference. If you don't want any heat, you can use a can of diced tomatoes or just leave it out.
- I really like the cheddar cheese soup for this recipe, but it can be swapped out with cream of chicken soup as well.
- If you use frozen hash browns, the bake time will be longer. I highly recommend the Simply Potato Shredded Hash Browns.

How to Make Ground Beef Hash Brown Casserole:

Step 1: Preheat the oven to 425 degrees. In a large skillet over medium heat, add in the ground beef and cook breaking up the meat in the skillet as it browns.

Step 2: After a few minutes of cooking, stir in the onions, salt and taco seasoning and cook until the beef is no longer pink (this should take less than 10 minutes and if you're worried about it, don't be because it will cook more in the oven). Turn off the heat and push the beef and onions to one side of the pan and use a few paper towels to remove some of the excess grease.

Step 3: In a large bowl, combine hash browns, cheddar cheese, cheddar cheese soup, drained Rotel, and sour cream. Stir to combine.

Step 4: Add in the beef and onions mixture and stir again until combined.

Step 5: Transfer to a casserole dish (9x13 or 8x10) and cover with foil. Bake for 12 minutes, then remove foil and bake for another 8 minutes.

Step 6: Remove from the oven and allow to cool for 10 minutes before serving. Top with green onions, cut into squares, serve and enjoy!

- Shred the cheese yourself for a better melt.
- Drain a bit of the grease from the ground beef if it's a lot, but a few teaspoons will be good to cook the hash browns in the oven.

- 2 teaspoon taco seasoning
- ยฝ teaspoon salt
- 20 ounce shredded Simply Hash Browns (fresh near eggs, not frozen)
- 8 ounce block cheddar cheese, shredded from the block
- 8 ounce sour cream
- 10 ounce cheddar cheese Campbells soup
- 10 ounce Rotel (diced tomatoes and green chilies) I prefer mild
- 1 tablespoon green onion, sliced on a bias for topping
