Description

These Ground Beef Sweet Potatoes are loaded with nutrients and full of flavor! Seasoned ground beef tops tender sweet potatoes with avocado, feta and hot honey. Get ready for the most delicious and guilt free meal! 


Ingredients

  • 4 smaller sized sweet potatoes *larger ones will take longer to cook, washed and dried
  • 1 tablespoon olive oil
  • 16 ounce ground beef, preference for 85/15 lean to fat
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground ginger
  • 2 ripe avocados
  • 4 tablespoons crumbled feta cheese
  • 4 teaspoons hot honey


Instructions

  1. Preheat the air fryer to 400 degrees. Brush 1 tablespoon of olive oil onto the outside skin to cover the sweet potatoes. Air fry for 30-40 minutes depending on the size of the sweet potatoes. I like to buy the smaller ones, so they cook faster. Flip over halfway through cooking.
  2. Once about 10-15 minutes remain on the potatoes: In a large skillet over medium heat, cook the ground beef, breaking it up as it cooks. About half way through cooking, stir in the seasoning mix of salt, cumin, coriander, chili powder, and ginger. Continue to sauté the beef until no longer pink. Turn off the heat.
  3. Check that the sweet potatoes are nice and tender by inserting a fork or knife into the center portion. Slice in half to open up.
  4. Top each sweet potato with a large helping of ground beef, slices from 1/2 an avocado, one tablespoon feta cheese, and a big drizzle of hot honey. Serve and enjoy!

Notes

  • Make sure to stick a fork or knife down into the center of the sweet potato to make sure it's fully cooked.
  • If the sweet potatoes are still a bit hard inside, cook in 5 minute increments until tender. *The bigger ones can take up to 45 minutes to cook, so I try and hand pick small ones.
