These turned out so yummy and I've swapped the usual cottage cheese out with feta. It adds the perfect salty touch.

Ingredients:

Sweet Potatoes: For a quicker cook time, make sure to buy the smaller sweet potatoes or they will take forever to get tender throughout.
Ground Beef: A ratio of 85/15 is my favorite ground beef for most recipes, including this one, because it's juicy still, but doesn't leave a ton of grease in the skillet.
Hot Honey: A drizzle of this adds the perfect sweet and spicy touch to finish off this dish.

Substitutions & Variations:
- Looking for a lower fat option? Feel free to use ground chicken, ground turkey or a leaner ground beef.
- For the TikTok Version, substitute the feta with a scoop of cottage cheese.
- Not big on spicy? Use regular honey instead of hot honey.
- The Sweet Potatoes can also be baked in the oven, but air frying will cook them quicker.

How to Make Ground Beef Stuffed Sweet Potatoes:

Step 1: Preheat the air fryer to 400 degrees. Brush 1 tablespoon of olive oil onto the outside skin to cover the sweet potatoes. Air fry for 30-40 minutes depending on the size of the sweet potatoes. I like to buy the smaller ones, so they cook faster. Flip over halfway through cooking.

Step 2: Once about 10-15 minutes remain on the potatoes: In a large skillet over medium heat, cook the ground beef, breaking it up as it cooks. About half way through cooking, stir in the seasoning mix of salt, cumin, coriander, chili powder, and ginger. Continue to sauté the beef until no longer pink. Turn off the heat.

Step 3: Check that the sweet potatoes are nice and tender by inserting a fork or knife into the center portion. Slice in half to open up.

Step 4: Top each sweet potato with a large helping of ground beef, slices from ½ an avocado, one tablespoon feta cheese, and a big drizzle of hot honey. Serve and enjoy!

- Make sure to stick a fork or knife down into the center of the sweet potato to make sure it's fully cooked.
- If the sweet potatoes are still a bit hard inside, cook in 5 minute increments until tender. *The bigger ones can take up to 45 minutes to cook, so I try and hand pick small ones.

- 4 smaller sized sweet potatoes *larger ones will take longer to cook, washed and dried
- 1 tablespoon olive oil
- 16 ounce ground beef, preference for 85/15 lean to fat
- ¾ teaspoon salt
- ¾ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon chili powder
- ¼ teaspoon ground ginger
- 2 ripe avocados
- 4 tablespoons crumbled feta cheese
- 4 teaspoons hot honey
