Description
This Apple Oatmeal Cake is so delicious and features a moist cake with baked apples and a buttery oatmeal topping! It's easy to make and always a Fall favorite in our home. Plus, it only takes an hour from start to finish.

Apple Cake:
- 2 apples, peeled and diced fine (1.5 cups diced)
- 1 and 1/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup 0-2% fat plain greek yogurt (I used 0%)
- 1 teaspoon vanilla extract
Oat Topping:
- 1/4 cup all purpose flour
- 1/2 cup old fashioned oats
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 5 tablespoons salted butter *do not remove from fridge until you start the oat topping.
Instructions
- Preheat the oven to 350 degrees. Peel and finely dice the apples.
- In a large bowl, whisk together the 1 and 1/4 flour, baking powder, salt, 1 teaspoon cinnamon, and 1/4 teaspoon ground nutmeg, 3/4 cup granulated sugar, and 1/4 cup brown sugar. Add in eggs, oil, greek yogurt, and vanilla and stir until combined. Toss in the fresh apples and stir to combine.
- Grease an 8x8 cake pan and line with parchment paper. Pour the cake batter into the cake pan. Set aside.
- Into a bowl, add in oats, 1/4 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Whisk to combine.
- Remove the butter from the fridge and cut into about 20 small pieces. Add into the oat mixture. Blend the butter into the oat mix by using a pinching motion with your hands until combined. It should look like wet sand, but a few bigger chunks is good.
- Sprinkle the oatmeal topping over the entire top of the cake batter.
- Bake for 40-45 minutes until fully cooked. Remove from the oven and allow to cool for 10 minutes before cutting into slices. Serve and enjoy!
Notes
- Peel and dice the apples pretty small so they cook fully when baking. We don't want any crunch.
- For the oat topping, the butter should be really cold right from the fridge and cut it into small cubes before adding it into the mix.
