This Apple Oatmeal Cake is so delicious and features a moist cake with baked apples and a buttery oatmeal topping! It's easy to make and always a Fall favorite in our home. Plus, it only takes an hour from start to finish.
I'm all about baking with fresh apples in the Fall and this is one of my favorite recipes. This Apple Oat Cake tastes amazing for breakfast with coffee or pair it with apple cider for snack or dessert!
I keep this cake on my counter wrapped up for two days and go in multiple times a day just like brownies. It's a problem.

Ingredients:

Oats: The Old Fashioned Oats are best for this recipe and I used the Quaker brand.
Apples: Highly recommend honeycrisp apples for this recipe. They're sweet and always really crisp.
Butter: I like Salted butter for the oat crumble topping.
Greek Yogurt: I wanted this to be more of a breakfast cake, and the yogurt works really well to keep it moist. Use Greek 0-2% plain yogurt.

Substitutions and Variations:
- The greek yogurt can be swapped out for sour cream.
- If you want to use unsalted butter you can, but I suggest adding ยฝ teaspoon of salt to the oat topping mixture.
- Other apple varieties can be used in place of the honeycrisp.

How to Make an Apple Oatmeal Cake:

Step 1: Preheat the oven to 350 degrees. Peel and finely dice the apples.

Step 2: (1) In a large bowl, whisk together the 1 and ยผ flour, baking powder, salt, 1 teaspoon cinnamon, ยผ teaspoon ground nutmeg, ยพ cup granulated sugar, and ยผ cup brown sugar. (2) Add in eggs, oil, greek yogurt, and vanilla and stir until combined. (3) Toss in the fresh apples and stir to combine. (4) Grease an 8x8 cake pan and line with parchment paper. Pour the cake batter into the cake pan. Set aside.

Step 3: (1) Into a bowl, add in oats, ยผ cup flour, ยฝ cup brown sugar, ยผ cup granulated sugar, 1 teaspoon cinnamon, and ยผ teaspoon nutmeg. Whisk to combine. (2) Remove the butter from the fridge and cut into about 20 small pieces. Add into the oat mixture. (3) Blend the butter into the oat mix by using a pinching motion with your hands until combined. It should look like wet sand, but a few bigger chunks is good. (4) Sprinkle the oatmeal topping over the entire top of the cake batter.

Step 4: Bake for 40-45 minutes until fully cooked. Remove from the oven and allow to cool for 10 minutes before cutting into slices.

Step 5: Serve and enjoy!
Expert Tips:
- Peel and dice the apples pretty small so they cook fully when baking. We don't want any crunch.
- For the oat topping, the butter should be really cold right from the fridge and cut it into small cubes before adding it into the mix.
- To check if the cake is fully cooked, insert a toothpick into the center and remove. We want crumbs on the toothpick, not wet batter. The top may look a little wet from the buttery crumb topping.

Apple Cake:
- 2 apples, peeled and diced fine (1.5 cups diced)
- 1 and ยผ cup all purpose flour
- 1 teaspoon baking powder
- ยฝ teaspoon salt
- 1 teaspoon ground cinnamon
- ยผ teaspoon ground nutmeg
- ยพ cup granulated sugar
- ยผ cup packed brown sugar
- 3 eggs
- ยฝ cup vegetable oil
- ยฝ cup 0-2% fat plain greek yogurt (I used 0%)
- 1 teaspoon vanilla extract
Oat Topping:
- ยผ cup all purpose flour
- ยฝ cup old fashioned oats
- ยฝ cup packed brown sugar
- ยผ cup granulated sugar
- 1 teaspoon ground cinnamon
- ยผ teaspoon nutmeg
- 5 tablespoons salted butter *do not remove from fridge until you start the oat topping.
