Description
This Ground Beef and Broccoli Stir Fry features Udon Noodles in a homemade Teriyaki Sauce for a delicious 30 minute dinner. It's packed full of flavor for a filling dinner that's quick and low effort.

Teriyaki Sauce:
- 1/4 cup soy sauce
- 3 tablespoons hoisin sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove minced garlic
Stir Fry:
- 1 tablespoon olive oil
- 2 cups fresh broccoli florets
- 1 cup yellow onion, diced
- 1 cup coleslaw mix, without dressing
- 1 lb ground beef (preference for 85/15)
- 6 ounces of Udon Noodles
- 1 teaspoon sesame seeds
Instructions
- In a bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, ginger and garlic. Set aside.
- In a skillet over medium low heat on the stovetop, pour in the olive oil. Add in broccoli, onion, and the slaw. Cover and cook for 4 minutes, then uncover and stir in one tablespoon of water. Cover and continue to cook for another 3-4 minutes until the broccoli is softened. Note: It will cook more in the skillet later, so it doesn't need to be fully tender. Transfer the vegetables into a bowl and set aside.
- Return the skillet to the stovetop and increase the heat to medium. Cook the ground beef until no longer pink, breaking it up as it cooks. While the beef is cooking, bring a large pot of water to a boil on the stovetop.
- Add the udon noodles to the boiling water and cook for 4 minutes. Transfer to a strainer and rinse with cold water.
- Once the beef is no longer pink, reduce the heat to medium low, add in the vegetables and pour over the teriyaki sauce. Allow it to cook for about 2-3 minutes.
- Transfer the udon noodles to the skillet and cook for another 2 minutes, tossing frequently to avoid the noodles sticking to the pan. Top with sesame seeds, serve and enjoy!
Notes
- If there is a lot of grease in the skillet after cooking the ground beef, place it to one side of the pan, then carefully lift the pan with the meat side higher up and the grease will drain to the other side. Take 3 paper towels and ball them up. Dab up the grease and throw away. Then, add in the veggies.
- Don't over boil the pasta. It should boil in just 3-4 minutes. Then, strain it and give it a quick rinse with cold water before adding it into the stir fry.
