This Ground Beef and Broccoli Stir Fry features Udon Noodles in a homemade Teriyaki Sauce for a delicious 30 minute dinner. It's packed with flavor for a filling dinner that's quick and low effort.
I love a good stir fry, but I always rice as the carbohydrate. This time I went with stir fry noodles and it was such a great switch up. Plus, the udon noodles only have to boil for about 3-4 minutes. Highly recommend!

Ingredients:

Ground Beef: I like an 85/15 lean to fat ratio, so that it's still juicy, but also doesn't leave a ton of grease in the skillet. If you use a fattier blend like 80/20, dab up some of the grease with paper towels before adding the veggies back in.
Udon Noodles: Great for stir fry and boil in just 4 minutes. I found these in the International Asian section of the grocery store.
Broccoli: Use fresh broccoli, not frozen, for a much better taste. Frozen will get really soggy.
Cole Slaw: I buy the pre-cut coleslaw in the package for a shortcut. If I can, I'll buy the one without the dressing. It's cheaper and we don't need it.

Substitutions and Variations:
- Want less sodium? Use a low sodium soy sauce or you can leave off the teriyaki sauce.
- Lo Mein Noodles can be substituted for the Udon Noodles. Follow the instructions on the package for cooking. In a pinch, you can use spaghetti noodles. I do prefer the udon because they cook faster and the texture is a little different.
- If you don't want to make the teriyaki sauce, you can use a store-bought version and add about ยผ cup. You can always add more, but it's good to start small because some of them are really salty.

How to Make Beef Broccoli Stir Fry:

Step 1: In a bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, ginger and garlic. Set aside.

Step 2: In a skillet over medium low heat on the stovetop, pour in the olive oil. Add in broccoli, onion, and the slaw. Cover and cook for 4 minutes, then uncover and stir in one tablespoon of water. Cover and continue to cook for another 3-4 minutes until the broccoli is softened. Note: It will cook more in the skillet later, so it doesn't need to be fully tender. Transfer the vegetables into a bowl and set aside.

Step 3: Return the skillet to the stovetop and increase the heat to medium. Cook the ground beef until no longer pink, breaking it up as it cooks. While the beef is cooking, bring a large pot of water to a boil on the stovetop.

Step 4: Add the udon noodles to the boiling water and cook for 4 minutes. Transfer to a strainer and rinse with cold water.

Step 5: Once the beef is no longer pink, reduce the heat to medium low, add in the vegetables and pour over the teriyaki sauce. Allow it to cook for about 2-3 minutes.

Step 6: Transfer the udon noodles to the skillet and cook for another 2 minutes, tossing frequently to avoid the noodles sticking to the pan. Top with sesame seeds, serve and enjoy!
Expert Tips:
- If there is a lot of grease in the skillet after cooking the ground beef, place it to one side of the pan, then carefully lift the pan with the meat side higher up and the grease will drain to the other side. Take 3 paper towels and ball them up. Dab up the grease and throw away. Then, add in the veggies.
- Don't over boil the pasta. It should boil in just 3-4 minutes. Then, strain it and give it a quick rinse with cold water before adding it into the stir fry.
