Description

Get ready for flavor overload with this Creamy Asian Chicken Salad with spicy Sriracha Mayo. The recipe uses rotisserie chicken as a shortcut, so it only takes 10 minutes to make. Plus, it's packed with protein and big on taste. 


Ingredients

  • 1 rotisserie chicken (cooled in fridge)
  • 1 red bell pepper, stem and seeds removed, diced fine
  • 3/4 cup red onion, diced fine
  • 3/4 cup celery, diced
  • 1 avocado, pit and skin removed, diced
  • 2 tablespoons fresh cilantro, minced
  • 1/2 cup mayonnaise
  • 2-3 teaspoons sriracha *depending on how spicy you like it
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • Serve on romaine hearts or with crackers or wheat thins

Instructions

  1. Remove the skin from the rotisserie chicken and dice up the white breast meat and dark thigh/drumstick meats. Add them into a large bowl. 
  2. Over the chicken, toss in celery, avocado, red onion, red bell pepper, mayonnaise, sriracha, salt and pepper, and 3/4 of the cilantro. Stir to combine. 
  3. Top with additional cilantro, serve and enjoy!

Notes

  • If you're prepping this salad ahead, wait and add the avocado at serving to prevent any browning. 
  • Serve with wheat thins, crackers or on romaine hearts
