Rotisserie Chicken: A shortcut ingredient to cut down on prep time. Just remove the skin, dice the chicken, and throw it into the bowl.
Mayonnaise: I'm a Hellmann's girl, but you can also use the Dukes.

Substitutions and variations:
- If you don't like rotisserie chicken, feel free to use 2 cooked chicken breasts and dice or shred.
- The cilantro can be left off if you don't like the taste.
- I like serving this version of chicken salad as lettuce wraps, with wheat thins, or right out of the bowl. If you're looking for a version on bread for a sandwich or with a croissant, I would try this dill chicken salad or classic chicken salad.

How to MAKE aSIAN CHICKEN SALAD:

Step 1: Remove the skin from the rotisserie chicken and dice up the white breast meat and dark thigh/drumstick meat. Add them into a large bowl.

Step 2: Over the chicken, toss in celery, avocado, red onion, red bell pepper, mayonnaise, sriracha, salt and pepper, and ¾ of the cilantro. Stir to combine.

Step 3: Top with additional cilantro. Serve and enjoy!

- 1 rotisserie chicken (cooled in fridge)
- 1 red bell pepper, stem and seeds removed, diced fine
- ¾ cup red onion, diced fine
- ¾ cup celery, diced
- 1 avocado, pit and skin removed, diced
- 2 tablespoons fresh cilantro, minced
- ½ cup mayonnaise
- 2-3 teaspoons sriracha *depending on how spicy you like it
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- Serve on romaine hearts or with crackers or wheat thins
