Pineapple Jalapeño Margarita

Description

This Spicy Pineapple Jalapeño Margarita packs just the right amount of heat! The flavors are so fresh and perfect for poolside or Taco Tuesday! 


Ingredients

Scale
  • 2 ounces simple syrup (Store-bought or easily make it using a 1 to 1 ratio of sugar to water. See above in post for directions)
  • juice from 1 and 1/2 limes (You need 1 lime for the juice for the drink and 1/2 for the garnish to stick)
  • 1 ounce Grand Marnier or Triple Sec
  • 2 ounces tequila (Patron Silver is my favorite here, but I used Anejo, which creates a smokier flavor. We are dealing with a liquor shortage and I couldn’t get my hands on my favorite. It was a sad day for this little mama.)
  • 4 fresh jalapeño slices (2 for drink and 2 for garnish) Pull the seeds out and discard if you don't like spicy. The heat on these isn't bad unless you get your hands on some monster heat jalapeños, which I've done before.
  • 8 ounces of pineapple juice
  • 2 wedges of fresh pineapple for garnish
  • 2 tablespoons Tajin seasoning
  • Ice 
  • Cocktail glasses

Instructions

Into the shaker, mix simple syrup and 2 jalapeños. Muddle it up with a muddler or the bottom of a spoon if you don’t have one. This will release that spicy flavor we want! 

Fill the shaker with ice. Then, add juice from one lime, Grand Marnier, Tequila, & Pineapple Juice. Shake it up!

Pour remaining lime juice onto a plate and sprinkle Tajin on another plate. Roll the rim of the cocktail glasses in the lime juice, then in the Tajin. Carefully fill the glass half way with ice.

Now, pour your cocktail over the ice. Top with a slice of fresh jalapeño & a pineapple wedge and enjoy this flavorful spicy little Margarita.

Notes

Only makes 2 Margs, so double, triple, or quadruple if needed. I made these once for a small get together and the guests were like..keep em coming.
